Grammie’s Zucchini Bread (Gluten Free)

Makes 2 Loaves or approximately 12 Muffins

Prep Time—20 Minutes
Cook Time—45 Minutes (Bread) 25 Minutes (Muffins)

 
 

Ingredients

  • ½ cup butter or coconut oil, melted

  • 1 cup milk 

  • 2 eggs, beaten

  • ½ cup applesauce

  • 1/3 cup honey or maple syrup

  • 2 tsp vanilla

  • 2 cups grated zucchini (if grated zucchini is very wet, use a nut milk bag to press out excess water)  (substitutions: chopped apple, grated carrot) 

    Grammie recommends adding 1 tsp Orange Zest

Dry Ingredients

  • 1 ½ cups oat flour (grind 1 ½ cups rolled oat in a food processor or high-powered blender till flour forms)

  • 1 cup almond flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 tsp ground cinnamon

  • 1/3 cup chopped pecans

  • ¼ cup raisins, currants or dried cranberries (optional)

 

Directions

Heat oven to 350 F

Mix the first 6 ingredients in a separate bowl

Mix the dry ingredients in a large bowl

Combine the wet and dry ingredients, then fold in the grated zucchini

Grease 2 bread pans, add ½ the batter to each pan, (or use muffin pans)

Bake till a knife or toothpick in center comes out clean – approx. 45 minutes for bread, 25-30 minutes for muffins.
